Title: Navy Beans Les Tarragon

VEGETARIAN TIMES; OCT 94
1tbOlive oil
1cOnion; diced
1cDomestic mushrooms; quartered
1cScallions; thinly sliced
1cLeeks; thinly sliced
1tsDried leaf tarragon
15ozCanned navy or great northern beans; drained
1/2cWhite wine
1/2cSoymilk powder
2tsDark miso
1/2tbLemon juice
  Red bell pepper; diced, for garnish
  Scallions; sliced, for garnish

In a large nonstick skillet, heat oil. Add onion, mushrooms, scallions, leeks and tarragon; saute until onions are transparent, about 5 minutes. Stir in beans; reduce heat to medium-low.

In a bowl, whisk together wine, soymilk powder,miso and lemon juice. Add to skillet; simer gently 5 minutes. Garnish with scallions and bell pepper if desired. Makes 4 servings.

Helpful hint: If you plan to serve this over a pasta or grain, double the amount of wine, soymilk powder, miso and lemon juice to make more sauce.
